CONCLUSIONS It was determined that the stability of curcumin is greater as the pH value increases and not under conditions of acid pH as several authors have claimed [15-17]. The stability of curcumin in aqueous medium is improved in all cases when working solutions are protected from incident light, work carried out under a N2 (g) atmosphere (after bubbling with this gas for 5 minutes) and controlled temperature.
